Big Al's Smoked Pork Butt

5-6 pound pork butt
½ cup (or more) Big Al's Texas Rubs Original Flavor
  or whatever flavor you like

Thoroughly coat outside surface of pork with seasoning. Pat well into surface of the meat making sure to cover all sides. Allow pork to rest 15 to 30 minutes while preparing smoker. Big Al prefers to use mesquite charcoal to start the fire in the smoker firebox and then add mesquite chunks during the smoking process. Place prepared pork on smoker rack. Smoke the meat at 250 to 275 degrees F for 5-6 hours. Remove from smoker, wrap in aluminum foil and allow meat to rest for 15-20 minutes. Shred pork with two forks, mixing in any drippings that may have accumulated in the foil wrapping. Serve on buns with barbecue sauce or all by itself with beans and potato salad on the side.
