Mama Shay's Baked Chicken and Rice
Serves 4-6
350 degree F oven
One whole fryer cut into serving sized pieces (skinned if you like less fat)
1 T. Big Al's Texas Rubs Original Flavor Seasoning or whatever flavor you like
3 T. margarine
1½ cup uncooked rice
½ cup chopped onion
4 cups chicken broth
Melt margarine in large skillet and cook rice and onion until rice is lightly browned. Transfer rice and onions to 9" X 13" baking pan. Sprinkle chicken pieces with Big Al's Texas Rubs Original Flavor Seasoning and place on top of rice in baking pan.
Pour in chicken broth. Cover pan with aluminum foil, sealing tightly around the edges of the pan and place in oven. Bake for 45 minutes, then remove foil and continue baking for 15 more minutes to brown chicken.
