Big Al's Ribs

1-2 racks of ribs with membrane removed
  (Use whatever type of rib you prefer)
½ cup (or more) Big Al's Texas Rubs (you choose the flavor)

After removing the tough membrane from the back-side of the ribs, rub all surfaces with your choice of seasoning. Allow racks to rest 15-30 minutes while preparing your smoker. Big Al prefers mesquite charcoal and mesquite wood chunks for all his smoked meats but use what you like.

Place ribs on smoker rack and smoke at 250 to 275 degrees F for 3 hours. Remove ribs from smoker and wrap in aluminum foil and place in oven at 300 degrees F for an additional hour. Rib meat will be tender enough to melt in your mouth!

For those of you not lucky enough to have a smoker, the seasoned ribs may be wrapped in aluminum foil and baked in the oven for about 1½ hours at 325 degrees F. The last 30 minutes, uncover to allow ribs to brown or baste with your favorite barbecue sauce. Of course you won't get that wonderful pink smoke ring, but the ribs will still be finger-lickin' good!
